Wilton Benitez, a renowned Colombian coffee producer with over 12 years of experience, cultivates rare varietals on his three farms in Piendamó, Cauca, with this Striped Bourbon lot sourced from his Granja Paraiso 92 farm. Inspired by his family’s coffee legacy, Wilton innovated by applying fermentation techniques from wine, beer, and cheese industries, developing precise protocols to create unique flavour profiles. His mantra, “everything is about control,” guides a meticulous process of selective cherry picking, classification by density and size, and UV sterilisation before tailored fermentation to enhance each variety’s intrinsic qualities.
His coffee’s distinctive profiles stem from controlled fermentation, specific microorganisms, and a thermal shock method of soaking beans in hot and cold water. The addition of a dry mill two years ago ensures clean processing and enables Wilton to share expertise with neighbouring farmers through a social framework, promoting better agricultural and milling practices
