This coffee was grown by Luis Anibal Calderon at the farm Villa Betulia. This lot is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Luis is becoming increasingly known for the high quality of his micro-lots of rare varietals, as well his skill in post-harvesting processing methods.

We feel this lot really showcases Luis’ skill in processing as the washed anaerobic method has been excellently balanced to elevate the innate deliciousness of this Pink Bourbon.

Cherries were floated, hand-sorted and then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
