Marlon Rojas is a producer who one can definitively say has found his life’s calling in coffee. A third-generation coffee farmer working alongside his uncles, Marlon expands on the experience of generations with his own skills in the production and cupping of new specialty coffees.
Marlon’s ‘Passiflora’ Red Bourbon perfectly demonstrates the results of combining experience and innovation. By combining the semi-washing ‘Honey’ process and 48 hours of co-fermentation with fresh passion fruit, Marlon and his family have created a beautifully complex and fruity offering.
The ‘Passiflora’ balances the bright, fruity punch of the passion fruit with delicate floral and citric notes that give it a much more three-dimensional profile than the typical co-ferment while still delivering on the juiciness that we at ALL CAPS so crave.
